When the summer heat sets in it’s nice to have a healthy salad on hand for lunch or dinner meals. I like adding quinoa to my recipes for extra nutrition and protein and it’s always tasty in a cold summer salad. Here are three of my favorite quinoa salad recipes for summertime.
This is a twist on the traditional four bean salad. It’s super easy to throw together and actually something that contains quinoa that my kids enjoy eating so that makes it a keeper in our home!
This is my favorite quinoa recipe. Perhaps it’s the delicious maple vinaigrette dressing that I love or the fresh fruit. Either way, it’s really easy to make and easy to adapt to what you have on hand. I have found this salad to be equally tasty with apples or strawberries and when I don’t have fresh fruit on hand I’ve tossed in some dried cranberries instead. And make a little extra dressing to use on other salads…it’s that yummy!
This salad is a hit at social gatherings and potlucks. Serve it chilled (my favorite way) or eat it warm right after making it. It calls for agave in the dressing but I use honey. Super tasty and filling on a warm summer day!
